Apricot Jam Glaze
This is a recipe for a simple glaze that can be used on fruits for cakes or tart. It gives the fruits a beautiful glossy sheen and keeps them from drying out as well.
This is recipe is so easy and can easily be customize-able by simply changing the flavor of the fruit jam or preserve. You can also add fruit flavored liqueurs to elevate it yet another level. I usually just do the jam and water, especially for my cakes like the vanilla chiffon fruit cake that I will be posting within the next couple of days.
A couple of notes:
- If the glaze has cooled too much and have set, simply place in the microwave for 5 to 10 seconds and the heat will help make it workable again.
- You can add fruit liqueurs for added flavor and dimension, but try to get flavors that compliments the fruit jam that you are using.
- For the vanilla chiffon cake topped with fruits, I used apricot. You can use any other flavor you like, but I like the lighter color and more subtle and slightly tart flavor to offset the fruits themselves.
Apricot Jam Glaze
Time: 5-10 minutes
Yields: 1/3 cup
¼ cup apricot jam or preserve
2 to 3 tablespoons water
In a small sauce pan, heat jam and water until melted. Strain through a fine mesh sieve to remove fruit pieces. Let cool for 5-10 minutes before using.
