Banoffee Pie

Banoffee pie is a British pie that is typically made with whipped cream, banana, and thick caramel or dulce de leche sauce. The toffee-like sauce and banana lends the pie its name. Some versions may include coffee and/or chocolate. Yum!
My version of the recipe calls for making the toffee from scratch and does not require cooking condensed milk in a can for hours.
Notes:
• Filling – alternative to this from scratch version, you can boil or bake condensed milk to make dulce de leche. However, I have heard grumbles, of the health hazards of cooking food in a can. Also, if you are in a pinch for time, you can completely avoid all of that and buy premade dulce de leche.
• Whipped Cream – there are purists who will say keep your cream unsweetened, but it’s literally just fatty cream. Give it some love.
• Toppings – if you want to go all out, chop up pieces of toffee or even peanut butter cups. Drizzle on caramel and chocolate sauce.
Banoffee Pie
Time: 1 hour
Serves: 8-10 servings
Crust
12 whole (185g) graham crackers
¼ cup (50g) sugar
6 tablespoons (90g) unsalted butter, melted and slightly cooled
Toffee filling
1 cup (237 ml) heavy cream (heavy whipping cream/ double cream)
1 cup (200g) brown sugar
4 tablespoons (60g) unsalted butter
1 teaspoon vanilla extract
¼ teaspoon salt
Whipped Topping
2 cups (~475 ml) heavy whipping cream
2 tablespoons (15) icing sugar / confectioner’s sugar
½ teaspoon vanilla extract
3 medium bananas

• To make the crust, place graham crackers, sugar, and melted butter into a food processor. Pulse a few times until you get coarse crumbs.
• Pour onto a pie pan. Using the back of a measuring cup to shape and press the crust onto the pan.
• Place the prepared crust into the fridge to chill.
• To prepare the toffee filling, heat the brown sugar and heavy cream in a saucepan over medium heat until the sugar has melted, and the mixture begins to boil.
• Add butter and cook until the mixture has thickened. About 10-15 minutes. Make sure to stir occasionally.
• Turn off the heat. Add vanilla extract and salt. Allow the filling to cool slightly, for about 5 minutes.
• Pour the filling into the prepared pie pan.
• Slice the bananas and arrange on top of the toffee layer.
• To make the homemade whipped cream, beat the heavy whipping cream with icing sugar and vanilla extract until you get stiff peaks.
• Spread on top of the banana layer.
• Use a vegetable peeler to shave chocolate on top of the pie.
