Banana Spring Rolls

This is one of my guilty pleasure desserts partially because of the ease in making it. I always have spring roll wrappers in the freezer and can easily throw this dessert together in minutes. It’s a great way to use up those extra bananas and the banana springs rolls will be gobbled up within minutes. It’s a great way to use bananas when I don’t feel like baking. ::gasp:: Yes, it does happen.

You get creamy, sweetness from the banana and crunchiness from the wrappers. Spring roll wrappers are slightly salty, so there’s that hint of saltiness. It can be dressed up with ice cream and caramel sauce, but I like it simply with just a drizzle of honey.

Not only is this a great way to use extra bananas, it’s also a great way to use extra wrappers. When I make spring rolls, if have extra wrappers and bananas. Guess what I’d make?

Notes:

  • Spring roll wrappers – use any size and any brand that you have access to. You can use smaller sizes as well. I like the larger size ones because that’s what I always have on hand and you get the extra layers of crunch. Since we’re not using the whole package of spring roll wrapper, let the wrappers thaw at room temperature for a few minutes or so. The wrappers should be mostly frozen. Carefully peel the number of wrappers that you plan on using and quickly place the remaining wrappers into a freezer safe bag and back in the freezer.
  • Banana – you’ll want a banana that is ripe, but still firm. If it’s overripen, use a half of a banana per spring roll as they cook quicker. Adjust the amount of banana used depending on the size and variety of the banana. Don’t overthink it.
  • Jazz it up – dress it with caramel or chocolate sauce, sprinkle with a little bit of powdered sugar, or serve with ice cream. There are versions like the Filipino turon, which features banana with jackfruit and a sprinkle of brown sugar inside.

Banana Spring Rolls


Yields: 8 spring rolls
Time: 10 minutes

2 large bananas, ripen but still firm
8 sheets of spring roll wrappers, any size
1 tablespoon of water or egg whites
canola or vegetable oil to fry
1-2 tablespoons of honey (Optional)

• Preheat deep fryer or add 2 inches of oil to a heavy bottom pot and bring to temperature, about 350F.
• Peel and cut bananas into half the long way and then half again. They should be cut length-wise, the long way and not coins.
• Place one sheet of spring roll wrapper on a plate with one point towards you like a diamond. Place one piece of banana at the bottom corner. Roll the wrapper around the banana. About halfway up the sheet, fold in the side corners of the wrapper. Then continue to fold until one corner remains. Dab a little bit of water or egg whites on that corner to seal.
• Fry in the preheated fryer for 3-5 minutes or until golden brown.
• Using a slotted spoon, remove the banana rolls from the fryer and place on a plate lined with paper towels.
• Drizzle with honey and serve warm or cooled.
